Work carried out jointly by Kingston University in London, and Neal's Yard Remedies, tested twenty-one different plant extracts and found that white tea consistently offered the greatest benefits to health. Specifically, antioxidants help to prevent mutations occurring in the genetic material, or DNA. However, white tea was also found to prevent certain enzymes from breaking down proteins (most notably collagen and elastin) that form the underlying structure of the skin. Elastin provides flexibility and allows the skin to move with your body, allowing many important functions to take place. Collagen is a structural protein that is found in the skin, and also many of the connective tissues. The two function together to support the skin and prevent it from sagging. Both are also necessary in the repair of wounds.

Collagen and elastin make up most of the structure of the skin, but they naturally degrade over time as a result of enzymes acting on them and changing their shape. This leads to the characteristic signs of aging, such as wrinkles, lines and sagging of the skin. By reducing the action of these enzymes, the skin is able to retain its firm, youthful structure for much longer. These enzymes are also overactive in a number of degenerative disorders that involve inflammation, including rheumatoid arthritis.

The study, published in the BioMed Central Journal of Complementary and Alternative Medicine, used extracts of white tea that contained much lower doses of the active ingredients than would be found in a single cup of the drink, so the actual benefits could be even greater than initially suggested by this research.
